Vegetable Stew Recipe
Serves six
1 tbsp vegetable oil 4 cups mushrooms, sliced (I buy them presliced) 1.5 cups onion, chopped 2 cloves garlic, minced 1 cup carrots, cut into 1 inch pieces 1 cup celery, cut into 1 inch pieces 3 medium size red potatoes (unpeeled), cut into 1 inch chunks 1 15oz can diced tomatoes 1 15oz can kidney beans 1 8oz can tomato sauce 1 cup water 1 tsp dried thyme 1 bay leaf 1/2 tsp salt 1/2 tsp pepperChop the veggies. Heat oil in a large skillet or pot over medium heat. Add mushrooms, onions, garlic, carrots, and celery. Cook 10 minutes, stirring frequently. Add remaining ingredients. Bring to a boil, then reduce heat to low, cover and let simmer 30 minutes. Stir occasionally. Remove and discard bay leaf.
